Lavender Jelly

3-1/2 cups water

1/2 cup dried lavender flowers

juice of one lemon

1 box Sure-Gel

4 cups sugar

In a large pan bring water to just a boil.

Remove from heat and stir in dried lavnder flowers. Cover and let steep for 20 minutes.

After 20 minutes strain mixture through a fine mesh strainer into a deep kettle or pot discarding the lavender slowers.

Stir in lemon juice andSure-Gel. Continue stirring untilSure-Gel is thoroughly dissolved.

Over high heat, bring mixture to a hard rolling boil.

Add sugar all at cone and stir to dissolve. Bring back to full rolling oil and let boil for 2 to 4 minutes.

Testing for jelly thickness. Transfer to hot sterilized jars. Yields  5 half-pints
